Ingredients

Main Ingredients

  • 1 cup rolled oats Acts as the base, providing fiber and protein
  • A pinch salt
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 2 large eggs Provides structure and protein
  • 3 to 4 tablespoons milk of choice
  • 2 to 3 tablespoons plain yogurt (Greek or regular) Adds moisture and protein
  • 2 medium apples, peeled and chopped Provides natural sweetness and moisture
  • 1/4 cup dried cranberries Adds texture and tanginess

Instructions

Preparation

  • Preheat your oven to 360°F (180°C). Lightly grease your baking dish or line it with parchment paper.
  • In a blender, combine the oats, salt, baking powder, vanilla extract, cinnamon, eggs, milk, and yogurt. Blend until you get a smooth, thick batter for about 30 seconds.
  • Peel, core, and chop the apples into small pieces. Gently fold the apples and dried cranberries into the batter with a spatula to distribute evenly.
  • Pour the batter into the prepared baking dish, smoothing the top with a spatula.

Baking

  • Bake in the oven for approximately 30 minutes until the top is lightly golden and a toothpick or knife inserted in the center comes out mostly clean.
  • Let the bake cool for about 10 minutes before slicing. This helps the protein treat set and makes slicing easier.

Notes

Enjoy plain, or serve with nut butter or honey. Store leftovers in the fridge for up to 3 days. Reheat gently to restore softness.
