Ingredients

Main Ingredients

  • 1.5 kg ripe plums Choose ripe, flavorful plums for the best puree.
  • 1 teaspoon ground cinnamon Adds warmth; feel free to adjust the amount based on your taste.
  • 1 tablespoon lemon juice Balances sweetness and enhances flavor.
  • 1 pinch ground cloves Optional, but adds a lovely depth to the puree.

Instructions

Preparation

  • Preheat your oven to 320°F (160°C).
  • Wash the plums, then halve and pit them.
  • Place the plums in a large ovenproof dish. Add lemon juice, cinnamon, and if desired, ground cloves. Give it a gentle stir to combine.

Cooking

  • Cover the dish with foil or a lid and place it in the oven. Allow the plums to simmer slowly for about 2 to 2.5 hours, stirring every 30 minutes to ensure even cooking.
  • Once the plums are dark, thick, and mushy, remove them from the oven.
  • Using a blender or immersion blender, puree the mixture until you reach your desired consistency—smooth or chunky.

Storing

  • While the puree is still hot, carefully fill clean jars. Seal them tightly.
  • Let the jars cool to room temperature, then store them in the refrigerator.

Notes

Keep an eye on the puree while it’s cooking; stirring prevents sticking. Adjust sweetness with added sugar or honey if desired before pureeing. Test the thickness before removing from the oven; it should hold a spoon shape but not be overly runny. Store the cooled puree in the refrigerator for up to two weeks.
