Ingredients

For the filling

  • 2 cups chopped strawberries Fresh or frozen strawberries both work.
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice A tiny splash makes the strawberry flavor pop.
  • 1 tablespoon cornstarch Helps the filling set.

For the crumble

  • 3/4 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 cup chopped pistachios Use shelled and lightly salted.
  • 1/4 cup butter Melted.

Instructions

Preparation

  • Preheat the oven to 350°F (175°C) and line an 8x8 inch pan with parchment paper.
  • In a bowl, chop the strawberries and toss them with sugar, lemon juice, and cornstarch. Set aside.
  • In another bowl, stir together the flour, sugar, chopped pistachios, and melted butter until crumbly.

Assembly

  • Press about two-thirds of the crumble mixture into the bottom of the lined pan.
  • Spoon the strawberry mixture evenly over the bottom crust.
  • Sprinkle the remaining crumble on top of the strawberry layer.

Baking

  • Bake in the preheated oven for about 30 to 38 minutes, or until the top is golden and the center looks set.
  • Allow to cool completely before slicing.

Notes

Tips: For best results, chop strawberries small to prevent a watery filling. Press the crust firmly and allow cooling for neat slices. If baking with frozen strawberries, do not thaw and add a few extra minutes to baking time.
