Ingredients

  • 1 wheel brie cheese (8 oz / 225 g), cut into 1-inch cubes
  • ½ cup crushed pistachios (60 g)
  • 1 tbsp olive oil (15 ml)
  • 12–16 mini phyllo cups or sturdy crackers

Raspberry Honey Glaze

  • ¼ cup raspberry preserves (80 g)
  • 1 tbsp honey (15 ml)
  • 1 tsp lemon juice (5 ml)

Garnish

  • Extra crushed pistachios (optional)
  • Fresh thyme or rosemary (optional)

Instructions

Preparation

  • Preheat the Oven: Set your oven to 350°F (175°C) and line a baking sheet with parchment paper for easy cleanup.
  • Prepare the Brie: In a bowl, toss the brie cubes with olive oil until they’re well coated.
  • Coat with Pistachios: Sprinkle the crushed pistachios over the brie cubes, ensuring they are evenly coated.
  • Arrange in Phyllo Cups: Place each brie cube into a phyllo cup or on a sturdy cracker and arrange them on the prepared baking sheet.

Baking

  • Bake the Bites: Bake in the preheated oven for 8–10 minutes, or until the brie has softened and the pistachios turn a lovely golden color.

Glazing

  • Make the Raspberry Honey Glaze: In a small saucepan, combine raspberry preserves, honey, and lemon juice. Heat over low, stirring until smooth and combined.
  • Glaze and Garnish: Once out of the oven, spoon the warm glaze over each baked brie bite. For added flair, garnish with extra crushed pistachios and fresh herbs if desired.

Notes

You can prepare the brie bites ahead of time and store them in the refrigerator before baking. Pair with fresh fruits or a light salad for a balanced appetizer spread. If desired, add cayenne pepper for a spicy kick!
