  • 8 oz cream cheese, softened
  • 1 cup shredded sharp cheddar cheese
  • ½ cup crushed pineapple, drained
  • ½ cup dried cranberries, chopped
  • ¼ cup green onions, chopped
  • ½ cup chopped pecans
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Fresh parsley for garnish

Preparation

  • In a large mixing bowl, combine the softened cream cheese and shredded cheddar cheese. Use a hand mixer or spoon to blend until smooth and well combined.
  • Add the crushed pineapple, chopped cranberries, green onions, garlic powder, onion powder, salt, and pepper to the bowl. Stir everything together until it’s evenly mixed.
  • Once the mixture is well combined, spoon it onto a piece of plastic wrap. Shape the mixture into a log. Wrap the plastic wrap tightly around the log, making sure there are no gaps, and refrigerate for at least 2 hours (or overnight, if you prefer).
  • After chilling, carefully unwrap the cheese log. Roll it in the chopped pecans, pressing gently so they adhere well to the surface.
  • Transfer the cheese log to a serving platter and garnish with fresh parsley.

Notes

Chill Time: The longer you let the cheese log chill in the refrigerator, the better the flavors meld together. Make it the night before for an even tastier treat! Nut Alternatives: You can skip the pecans and roll the log in crushed pretzels or breadcrumbs if you have a nut allergy.
