Ingredients

Cheese Mixture

  • 8 oz cream cheese, softened Use full-fat for best results.
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup crushed pineapple, drained Make sure to drain well to avoid excess moisture.
  • 1/2 cup dried cranberries, chopped
  • 1/4 cup green onions, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Coating

  • 1/2 cup chopped pecans Can substitute with walnuts or almonds.

Garnish

  • Fresh parsley For garnish.

Preparation

  • In a mixing bowl, combine the softened cream cheese and shredded cheddar cheese. Mix until smooth and well blended.
  • Add in the drained crushed pineapple, chopped dried cranberries, green onions, garlic powder, onion powder, salt, and pepper. Stir everything together until it’s evenly mixed.
  • Carefully spoon the mixture onto a piece of plastic wrap. Shape it into a log and wrap it tightly. Refrigerate for at least 2 hours to let the flavors meld.

Finishing

  • Once chilled, take the log out of the refrigerator and roll it in the chopped pecans. Press gently so they stick well.
  • Garnish the cheese log with fresh parsley and serve it with your favorite crackers or sliced baguette.

Notes

You can prepare this cheese log a day in advance. Store it wrapped in the fridge. It can be frozen for up to 1 month; thaw overnight in the refrigerator before serving.
