Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, use an electric mixer to beat the softened butter and granulated sugar together until the mixture is light and fluffy.
  • Stir in the vanilla extract until combined.
  • In a separate bowl, whisk together the all-purpose flour and salt.
  • Gradually add the flour mixture to the butter mixture, stirring until just blended.
  • Carefully fold in the shredded coconut and chopped dried pineapple until evenly distributed.

Baking

  • Using a tablespoon, scoop portions of dough onto the prepared baking sheet, leaving about 2 inches of space between each cookie.
  • Bake in the preheated oven for 12–15 minutes, or until the edges are just starting to turn golden brown.
