Ingredients

Base Ingredients

  • 2 cups Old fashioned rolled oats Quick oats work too, but will yield softer bars.
  • 1 cup Natural peanut butter Creamy is easiest, crunchy adds texture.
  • 1/2 cup Honey Can adjust amount for stickiness.
  • 1 teaspoon Vanilla extract Adds flavor depth.
  • 1 pinch Salt Useful if using unsalted peanut butter.

Optional Add-Ins

  • 1/2 cup Mini chocolate chips For chocolate lovers.
  • 1/2 cup Chopped nuts
  • 1/2 cup Shredded coconut
  • 1 teaspoon Cinnamon Optional for a cozy flavor.

Instructions

Preparation

  • Line an 8x8 pan with parchment paper, leaving extra hanging for easy removal.
  • In a medium bowl, mix together peanut butter and honey. Warm the peanut butter if needed to help mix.
  • Stir in vanilla and salt.
  • Add oats and mix until evenly coated.
  • For the almond flour version, add 2 to 4 tablespoons of almond flour as necessary.
  • Press the mixture firmly into the pan, using the back of a spoon first, then your hands.
  • Chill in the fridge for at least 45 minutes before slicing into bars.

Serving

  • You can melt chocolate and drizzle over the top for an extra treat.

Notes

Store in an airtight container in the fridge for up to a week. Can freeze sliced for long-term storage. They are best enjoyed chilled.
