Ingredients

Cookie Base

  • 1/4 cup unsalted butter, softened Make sure the butter is at room temperature.
  • 1/4 cup creamy peanut butter, well stirred Natural peanut butter should be stirred until smooth.
  • 1/4 cup light brown sugar, packed
  • 2 tablespoons granulated sugar
  • 1 large egg yolk, room temperature
  • 1/2 teaspoon pure vanilla extract
  • 3/4 cup all purpose flour, spooned and leveled
  • 1/4 teaspoon baking soda
  • 1/8 teaspoon baking powder
  • 1/8 teaspoon fine salt

Jam Filling

  • 2 to 3 tablespoons jelly or jam, slightly warmed Any flavor you like will work.

Instructions

Preparation

  • Cream the butter, peanut butter, and sugars in a medium bowl until smooth and fluffy, about 1 to 2 minutes.
  • Add the egg yolk and vanilla extract, mixing until combined.
  • In a separate bowl, whisk together flour, baking soda, baking powder, and salt.
  • Add the dry ingredients to the wet mixture and stir with a spatula until no dry patches remain, being careful not to overmix.
  • Refrigerate the dough for 15 minutes.

Baking

  • Preheat your oven to 350°F and line a baking sheet with parchment paper.
  • Portion the dough into 8 to 10 balls, about 1 1/2 tablespoons each, and place them on the baking sheet.
  • Make a shallow well in the center of each cookie with your thumb.
  • Warm the jam in the microwave for 5 to 10 seconds until loose, then spoon about 1/2 teaspoon into each well.
  • Using a toothpick, gently swirl the jam into the cookie dough without mixing completely.
  • Bake for 8 to 10 minutes until the edges are set and the centers are puffed.
  • Let the cookies rest for 5 minutes on the hot sheet, then transfer them to a cooling rack.
  • For neat round cookies, use a round cookie cutter to scoot around the edges right after they come out of the oven.

Notes

For a crunchy variation, use crunchy peanut butter instead of creamy. If using natural peanut butter, stir it well before mixing. You can mix jam flavors for a fun twist.
