  • 300-320 g flour
  • Butter for greasing

Filling

  • 1 small egg (for cream)
  • 2 tablespoons sugar (for cream) Amount can be adjusted based on sweetness preference.
  • 8 g vanilla sugar (for cream)
  • 1.5 tablespoons cornstarch
  • 1/4 liter milk

Toppings and Glaze

  • Apricot jam for glazing
  • Almond flakes for topping
  • Powdered sugar for decorating

Instructions

Preparation

  • In a bowl, whisk together the 2 large eggs, salt, 4 tablespoons of sugar, 8 g of vanilla sugar, and oil until well combined.
  • Gradually add the baking powder and then the flour, mixing until a smooth dough forms.
  • Grease the baking mold with butter and press the dough evenly into the bottom and sides of the mold.
  • Slice the peaches and arrange them uniformly over the dough. Sprinkle with 1 tablespoon of sugar.

Cooking

  • In a saucepan, combine the small egg, 2 tablespoons of sugar, 8 g of vanilla sugar, cornstarch, and milk. Whisk until smooth and cook over low heat, stirring constantly until the mixture thickens into a creamy consistency.
  • Preheat the oven to 180°C (350°F). Pour the cream over the peaches in the mold.
  • Bake for 40-45 minutes or until the tart is golden and set, and the top starts to bubble slightly.
  • Allow the tart to cool, then brush the top with apricot jam and sprinkle almond flakes over it.
  • Before serving, dust with powdered sugar for extra sweetness.

Notes

Make sure to slice the peaches evenly for consistent baking. Stir the cream constantly while cooking to avoid lumps. Let the tart cool completely for easier slicing and better presentation. Store any leftover tart in the refrigerator for up to three days.
