Instructions

Preparation

  • Preheat your oven to 350°F (175°C) and lightly grease a 9x9 inch baking dish or line it with parchment paper for easy removal.
  • In a mixing bowl, combine the diced peaches with lemon juice and 1 tablespoon of granulated sugar. Gently toss together and set aside for about 10 minutes to let the flavors meld.
  • In another bowl, mix together the all-purpose flour, rolled oats, brown sugar, ground cinnamon, and salt until well combined.
  • Pour in the melted butter and vanilla extract into the dry mixture, stirring until crumbly.
  • Press half of the crumb mixture into the bottom of the prepared baking dish to form an even crust.

Assembly

  • Distribute the peach mixture over the crust, spreading it evenly.
  • Sprinkle the remaining crumb mixture over the peaches, ensuring it covers them well.

Baking

  • Bake for 30-35 minutes or until the top is golden brown and the edges are bubbling.
  • Allow to cool completely in the baking dish before cutting into bars.

Notes

For a crunchier topping, bake an extra 5 minutes. Let the bars cool completely for easier slicing and serving. These bars can be served slightly warm or chilled, ideal for gatherings or a cozy dessert.
