  • 3 to 4 medium medium zucchini, cut into strips (3 inches long by 1/2 inch wide)
  • 1 cup almond meal (about 100 g) Ensure it's finely ground
  • 1/4 cup freshly grated Parmesan cheese (about 25 g)
  • 1 tablespoon dried oregano
  • 1/2 teaspoon garlic powder
  • Sea salt and pepper, to taste
  • 3 large egg whites Can substitute with 1 to 2 whole eggs
  • 2 tablespoons avocado oil or extra virgin olive oil

Instructions

Preparation

  • Preheat your oven to 400 degrees F (200 degrees C).
  • Line a large flat rimmed baking sheet with parchment paper.
  • In a shallow dish, combine almond meal, Parmesan cheese, oregano, garlic powder, salt, and pepper. Whisk until blended.
  • In a separate bowl, whisk together egg whites and oil until smooth.
  • Dip each zucchini strip into the egg mixture to coat and let excess drip back.
  • Coat the zucchini in the cheese mixture, patting gently for an even coating.
  • Place the coated zucchini strips on the prepared baking sheet in a single layer.

Cooking

  • Bake for 15 minutes or until golden brown and crispy.
  • For extra crunch, broil for an additional 3 to 5 minutes, watching closely.

Notes

These zucchini fingers are best served hot and can be paired with low-sugar marinara or ranch dressing. Add extra Parmesan before serving for more flavor. You can also serve alongside grilled chicken or fish.
