  • 2 cloves garlic, minced
  • 1 can (15 oz) diced tomatoes
  • 1 cup beef or vegetable broth Broth: Chicken broth can be used instead of beef for a different flavor profile.
  • 1 cup rice, uncooked Rice: Long-grain or jasmine rice works well in this recipe; brown rice can be used for a nuttier flavor.
  • 1 tablespoon olive oil
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)
  • Fresh cilantro or parsley for garnish (optional)

Instructions

Preparation

  • Heat the olive oil in a large skillet or pot over medium heat. Once hot, add the diced onion and sauté for 3-4 minutes until softened.
  • Stir in the minced garlic and cook for an additional minute until fragrant.
  • Add the ground beef (or meat substitute) to the skillet, breaking it up with a spoon. Cook until browned, about 5-7 minutes.
  • Mix in the diced tomatoes, broth, rice, chili powder, cumin, salt, and pepper. Stir well to combine all ingredients.
  • Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for 20-25 minutes, or until the rice is fully cooked and has absorbed most of the liquid.
  • If using cheese, sprinkle it on top before serving and cover for a few minutes to allow it to melt.
  • Fluff the mixture with a fork and garnish with fresh herbs before serving.

Notes

For added flavor, consider browning the meat longer for a rich depth. Use fresh herbs to elevate your dish; they can greatly enhance the overall taste. Adjust the spice level by adding more chili powder or even a dash of cayenne pepper. Allow the dish to sit for a few minutes after cooking; it will thicken up nicely.
