Ingredients

For the Cookie Dough

  • 125 g unsalted butter, softened Make sure the butter is at room temperature to cream easily.
  • 100 g brown sugar Packed tightly for accurate measurement.
  • 50 g granulated sugar
  • 1 large egg Room temperature preferred.
  • 5 ml vanilla extract
  • 125 g all-purpose flour
  • 1 tsp baking soda Ensure it's fresh for best results.
  • 1/2 tsp salt
  • 175 g rolled oats
  • 100 g raisins
  • 50 g chopped walnuts Optional, can be omitted.

Instructions

Preparation

  • Preheat your oven to 180°C (350°F) and line two baking sheets with parchment paper.
  • In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar together until light and fluffy.
  • Incorporate the egg and vanilla extract, mixing until everything is well combined.
  • In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this mixture to the butter mixture, stirring until just combined.
  • Gently fold in the rolled oats, raisins, and chopped walnuts (if using).
  • Use a tablespoon or cookie scoop to drop rounded spoonfuls of cookie dough onto the prepared baking sheets, leaving some space between each cookie.

Baking

  • Bake in the preheated oven for about 10-12 minutes, or until the edges are golden brown.
  • Remove from the oven and let cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.

Notes

For thicker cookies, refrigerate the dough for about 30 minutes before baking. These cookies are best enjoyed warm with a glass of milk.
