Ingredients

Dry Ingredients

  • 2 cups rolled oats (200g)
  • 3 tablespoons chia seeds (45g)
  • 1 teaspoon baking powder (5g)
  • 1/2 teaspoon salt (3g)

Wet Ingredients

  • 2 eggs
  • 1 cup water or plant-based milk (240ml)
  • 2 tablespoons olive oil or coconut oil (30ml)

Optional Topping

  • chopped seeds or nuts for topping

Instructions

Preparation

  • Preheat your oven to 350 degrees F (180 degrees C). Grease or line a loaf pan with parchment paper.
  • In a large bowl, combine the rolled oats, chia seeds, baking powder, and salt. Mix well.
  • In a separate bowl, whisk together the eggs, water (or plant-based milk), and oil until smooth.
  • Pour the wet mixture into the dry ingredients and stir until well combined.
  • Let the batter rest for 10 minutes to allow the chia seeds to absorb the liquid.
  • Transfer the mixture into the prepared loaf pan, smoothing the top with a spatula.
  • Sprinkle with seeds or nuts if desired.
  • Bake in the preheated oven for 40 to 45 minutes, or until firm and a toothpick comes out clean.
  • Allow the bread to cool completely in the pan before slicing.

Notes

For added flavor, consider incorporating spices like cinnamon or nutmeg. To add moisture and nutrients, mix in grated carrots or zucchini. If a sweeter bread is preferred, add honey or maple syrup to the wet mixture.
