Ingredients

Nuts and Seeds

  • 1/2 cup raw cashews Use any combination of nuts you prefer.
  • 1/2 cup raw pistachios Use any combination of nuts you prefer.
  • 3 tablespoons chia seeds These provide omega-3 fatty acids and can be replaced with flaxseeds if desired.
  • 1/2 cup dried cranberries Substitute with raisins, dried apricots, or other dried fruits according to your preference.
  • 1/4 cup sunflower seeds

Binding Ingredients

  • 1 cup unsweetened coconut flakes, plus more for rolling Opt for unsweetened coconut for a healthier option.
  • 3 tablespoons maple syrup Honey or agave syrup can be used as an alternative sweetener.
  • 2 tablespoons cashew butter Peanut butter can be used as a substitute.
  • 1/2 teaspoon vanilla extract

Instructions

Preparation

  • Preheat your oven to 300°F (150°C). Spread the cashews, pistachios, and sunflower seeds in a single layer on a baking sheet. Toast them for 10 minutes, then remove and allow to cool.
  • Once cooled, transfer the nuts and seeds to a food processor. Pulse until they are coarsely chopped—be careful not to overprocess.
  • In a separate bowl, pour the chopped mixture from the food processor.
  • In the food processor, combine the coconut flakes, maple syrup, cashew butter, and vanilla extract. Blend until the mixture is smooth and well-combined.
  • Pour the blended mixture into the bowl with the nuts and seeds. Mix by hand until everything is well incorporated.
  • Measure out 1 oz (28 g) portions and roll them into balls. If desired, roll each ball in additional coconut flakes to coat.
  • Place the energy bites in the refrigerator for a few hours to firm up before serving.

Notes

Ensure your nuts are raw for the most health benefits; roasting can diminish some nutrients. Adjust the sweetness by adding more or less maple syrup based on your taste preferences. Use a cookie scoop to portion the mixture for evenly sized bites. Make sure to refrigerate after rolling to achieve the perfect consistency.
