  • 1.5 cups plain Greek yogurt Use plain unsweetened to keep it no sugar added.
  • 1.5 cups chopped strawberries Make sure to chop into small pieces.
  • 1 teaspoon vanilla extract Optional but enhances flavor.
  • 1-2 tablespoons sweetener Optional, depending on your sweetness preference.
  • 1 cup dark chocolate chips Choose no sugar added chocolate for no sugar variety.
  • 1 teaspoon coconut oil Helps chocolate melt smoother; optional.

Instructions

Preparation

  • Line a baking sheet or plate with parchment paper.
  • In a bowl, mix the Greek yogurt, chopped strawberries, and vanilla extract. Optionally, taste and add sweetener if desired.
  • Scoop the mixture into clusters on the parchment paper, about 1 tablespoon each.
  • Freeze the clusters for 1 to 2 hours until solid.
  • While the clusters freeze, melt the dark chocolate, stirring every 20-30 seconds in the microwave. If using coconut oil, add it before melting.
  • Once frozen, dip each cluster into the melted chocolate or drizzle chocolate over the tops.
  • Freeze again for 15 to 20 minutes until the chocolate sets.

Notes

Store these bites in the freezer to keep them firm. They can get soft and sticky if stored in the fridge. Best enjoyed within 2 weeks but can last up to a month if sealed properly.
