Ingredients

Main Ingredients

  • 1 cup Chocolate chips with no added sugar Look for stevia or monk fruit sweetened.
  • 1 cup Almonds Roasted, lightly salted preferred; raw can be toasted.
  • 1 tablespoon Coconut oil Can be swapped for cocoa butter or butter.
  • 1 cup Crunch add in (puffed rice, quinoa, or low sugar cereal) This is where the crunch really shows up.
  • 1 pinch Salt Enhances chocolate flavor.

Optional Extras

  • 1 teaspoon Cinnamon For a cozy flavor.
  • 1 teaspoon Vanilla extract Optional for added flavor.
  • 1 tablespoon Almond butter For a softer, chewier texture.

Instructions

Preparation

  • Line a baking sheet or plate with parchment paper.
  • Toast the almonds in a dry pan over medium heat for 3 to 5 minutes, stirring to avoid burning.

Melting and Mixing

  • Melt the chocolate in a microwave using 20 to 30 second bursts, stirring each time. Add coconut oil when melted.
  • Stir in the almonds, crunch add in, and a pinch of salt until well coated.

Forming Clusters

  • Drop spoonfuls (about 1 tablespoon each) onto the parchment paper.

Setting

  • Chill in the fridge for 20 to 30 minutes or in the freezer for about 10 to 15 minutes until firm.

Notes

Keep water away from melting chocolate to avoid seizing. Store in a sealed container in the fridge or freezer.
