Preparation

  • Crush the apple chips by placing them in a zip top bag and lightly smashing with a rolling pin or the bottom of a mug, aim for a mix of small pieces and some crunchy bits.
  • In a bowl, stir together almond flour, oats, cinnamon, salt, and any add-ins like chia seeds.
  • Stir in the nut butter, applesauce, and vanilla. Keep stirring until combined.
  • Fold in the crushed apple chips and save a small handful for pressing into the outside if desired.
  • Refrigerate the mixture for 15 to 20 minutes, then roll into bite-sized balls.

Notes

If the dough is too sticky, rub a little water on your hands when rolling. For a firmer dough, adjust the ingredients according to the consistency needed. Portion into smaller bites for kids.
