Ingredients

Base Ingredients

  • 2 cups old fashioned oats Quick oats can work for a softer texture.
  • 1 cup almond flour Provides a nutty base.
  • 2 tablespoons chia seeds Helps bind and adds chewiness.
  • 1 pinch salt Enhances flavor.
  • 1/3 cup maple syrup Can substitute with agave.
  • 1/2 cup almond butter Can substitute with cashew or sunflower seed butter.
  • 1 teaspoon vanilla extract

Strawberry Layer

  • 2 cups strawberries Fresh or frozen.
  • 1 tablespoon lemon juice Enhances strawberry flavor.

Creamy Layer

  • 1 cup coconut cream Or thick dairy-free yogurt.

Instructions

Preparation

  • In a bowl, stir together oats, almond flour, chia seeds, and salt.
  • Add maple syrup, almond butter, and vanilla. Stir until a thick cookie dough consistency is achieved.
  • Line an 8 inch pan with parchment paper and firmly press the oat mixture into the bottom.
  • In a small pot, warm strawberries with lemon juice until they become juicy. Mash with a fork.
  • If a thicker layer is desired, stir in 1 teaspoon chia seeds and let it sit for 5 minutes.
  • Stir the coconut cream or yogurt until smooth. Optionally add 1 to 2 teaspoons of maple syrup for extra sweetness.
  • Spread the creamy layer over the oat base, then spoon the strawberry mixture on top and swirl for a marbled effect.
  • Freeze for 3 to 4 hours before slicing into bars.

Notes

Press the base firmly for better slices and adjust sweetness to taste with maple syrup and lemon juice. Store in freezer and allow to thaw slightly before serving.
