  • 1 cup cottage cheese (full fat or low fat) Use small curd for smoother texture.
  • 2 to 3 tablespoons honey or maple syrup Adjust to taste.
  • 1 teaspoon vanilla extract
  • 1 unit zest of 1 orange Essential for flavor.
  • 2 to 4 tablespoons fresh orange juice
  • 1 and 1/2 cups mixed berries (strawberries, blueberries, raspberries, etc.) Can use fresh or thawed frozen berries.
  • 1/2 cup crushed graham crackers or granola For crusty crunch.
  • 1 pinch salt Enhances flavors.

Instructions

Preparation

  • Add cottage cheese, honey (or maple syrup), vanilla, orange zest, orange juice, and a pinch of salt to a blender or food processor. Blend until smooth.
  • Crush graham crackers in a bag with a rolling pin, or use granola. Chop chunky granola if necessary.
  • In small jars or glasses, layer a spoonful of graham crumbs or granola, then add the orange cottage cheese mixture, followed by the mixed berries. Repeat as necessary.
  • Refrigerate for at least 1 hour before serving to enhance flavor.
  • Before serving, add extra berries, a bit more orange zest, and a drizzle of honey on top if desired.

Notes

Store covered in the fridge for up to 3 days. Best consumed within the first 48 hours for crispy texture. For meal prepping, keep crumbs separate until serving.
