Ingredients

For the crust

  • 1 cup crushed graham crackers or crushed gluten-free cookie crumbs
  • 2 tbsp melted butter or coconut oil if using oats

For the filling

  • 1 cup plain Greek yogurt thick, high-protein; vanilla works too
  • 8 oz cream cheese full-fat preferred for better texture
  • 2 scoops vanilla protein powder whey or blend for best results
  • 1 tbsp sweetener maple syrup or honey; adjust to taste
  • 1 tsp vanilla extract
  • 1 pinch salt do not skip it!

Preparation

  • Line an 8x8 inch pan with parchment, leaving some overhang for easy removal later.
  • For the crust, mix crushed graham crackers with melted butter until it resembles wet sand. Press into the lined pan and place in the freezer.
  • For the filling, soften the cream cheese. Mix the cream cheese and Greek yogurt until smooth.
  • Add the protein powder, vanilla extract, sweetener, and salt. Mix until creamy and thick.
  • Taste the mixture and adjust flavors if necessary (more vanilla or sweetener as needed).
  • Spread the filling over the frozen crust and smooth the top. Cover and freeze for at least 4 hours, preferably overnight.
  • Once frozen, lift the cheesecake out using the parchment overhang, slice into squares, and enjoy!

Notes

Keep frozen until ready to eat; can be stored for up to a month. Allow to sit at room temperature for a few minutes before biting for easier eating.
