  • 2 cups unsweetened shredded coconut For the main structure of the bars.
  • 3-4 tablespoons coconut oil, melted Helps the bars set firm in the freezer.
  • 1 cup coconut cream Use the thick part from a chilled can of full-fat coconut milk.
  • 3-5 tablespoons maple syrup or honey Adjust based on desired sweetness.
  • 1-2 tablespoons matcha powder Start with 1 to avoid bitterness.
  • 1 teaspoon vanilla extract
  • 1 pinch salt Enhances flavor; do not skip.
  • optional white or dark chocolate drizzle, or extra coconut on top For added decoration and flavor.

Instructions

Preparation

  • Line your pan with parchment paper, leaving a little overhang for easy removal.
  • In a bowl, whisk together coconut cream, melted coconut oil, maple syrup, vanilla, and salt.
  • Sift in the matcha powder and stir well to avoid clumps. Taste the mixture and adjust matcha as desired.
  • Stir in the shredded coconut until the mixture feels thick and resembles sticky cookie dough.
  • Press firmly into the prepared pan using a spoon and your hands to create a compact layer.
  • Freeze for at least 3 hours or until solid, then lift out and slice into bars.
  • For a chocolate layer, drizzle melted chocolate on top after slicing and freeze again for 10 minutes.

Notes

Serve straight from the freezer for best texture; they soften quickly at room temperature. Best stored in an airtight container with parchment between layers.
