Ingredients

Base Ingredients

  • 80 pieces Keebler Club Crackers or similar buttery rectangular crackers You can substitute with similar buttery rectangular crackers or gluten-free options if desired.
  • 1 cup unsalted butter Unsalted butter is recommended for better control of flavor; however, salted butter can also be used if it’s what you have.
  • 2 cups graham cracker crumbs
  • 1 cup firmly packed dark brown sugar
  • 1/2 cup milk
  • 1/3 cup granulated sugar

Topping Ingredients

  • 2/3 cup creamy peanut butter For a crunchy texture, consider using chunky peanut butter.
  • 1/2 cup semi-sweet chocolate morsels
  • 1/2 cup butterscotch morsels

Instructions

Preparation

  • Line a 9 x 13-inch (23 x 33 cm) baking pan with aluminum foil, allowing the foil to hang over the edges for easy removal later.
  • Arrange a single layer of crackers on the bottom of the pan, cutting them to fit if necessary.
  • In a large saucepan, melt the butter over medium heat. Stir in the graham cracker crumbs, brown sugar, milk, and granulated sugar. Bring the mixture to a boil and cook for 5 minutes, stirring constantly until thickened.
  • Remove the saucepan from the heat and spread half of the graham mixture evenly over the layer of crackers in the pan.
  • Place another layer of crackers on top of the graham mixture, cutting to fit if needed, and then spread the remaining graham mixture on top.
  • Add a final layer of crackers on top of the remaining graham mixture.
  • In a small saucepan, combine the peanut butter, chocolate morsels, and butterscotch morsels. Melt over medium-low heat, constantly stirring until smooth.
  • Pour the melted mixture over the top layer of crackers, spreading it evenly with a spatula.
  • Cover the pan and refrigerate for at least 1 hour to set.
  • Once chilled, lift the bars out of the pan using the foil overhang, and cut into squares or rectangles.

Notes

Even melting: Stir continuously when melting the toppings to prevent scorching. Layering: Ensure each layer is evenly spread to maintain balance in flavor when serving. Cooling time: If you’re short on time, chill the Crunchers for at least 30 minutes for a softer treat. Serving temperature: Allow to warm slightly to room temperature for a more flavorful experience when enjoying the bars.
