Ingredients

For the Cookie Mixture

  • 1 cup Sugar (200 g)
  • 1/2 cup Unsalted Butter (113 g)
  • 1/4 cup Heavy Cream (60 ml)
  • 1 teaspoon Vanilla Extract
  • 1/2 cup Pecans, chopped (60 g)
  • 1/2 cup Dried Cranberries (75 g)
  • 2 cups Rolled Oats (180 g)
  • 1/2 teaspoon Salt

Instructions

Preparation

  • Begin by roughly chopping the pecans and measuring out your dried cranberries and rolled oats.

Cooking

  • In a medium saucepan, combine the sugar, unsalted butter, and heavy cream.
  • Place the saucepan over medium heat and stir frequently.
  • Continue stirring until the mixture bubbles for about 2-3 minutes, thickening slightly and turning a light caramel color.
  • Remove from heat and stir in the vanilla extract and salt.
  • Add chopped pecans and dried cranberries to the saucepan, stirring well to combine.
  • Fold in the rolled oats until everything is evenly coated.

Setting

  • Line a large baking sheet with parchment paper.
  • Using a tablespoon or small cookie scoop, drop mounds of the mixture onto the parchment, spaced about an inch apart.
  • Allow the cookies to cool completely at room temperature for about 30-40 minutes, or refrigerate to speed up the setting process.

Serving

  • Once set, they are ready to be enjoyed! Store any leftovers in an airtight container.

Notes

These cookies are great on their own or served with a warm beverage. They are also customizable; replace cranberries with raisins or add chocolate chips for variety.
