Chocolate Topping

Instructions

Preparation

  • In a medium bowl, combine rolled oats, peanut butter, honey or maple syrup, and pinch of salt. Mix until well combined.
  • Melt the chocolate by microwaving it gently in short bursts while stirring, or use a double boiler until smooth, adding coconut oil or butter if using.
  • Spoon the oat mixture into muffin liners, pressing firmly to form cups.
  • Top the pressed oat mixture with melted chocolate, spreading evenly.

Chilling

  • Refrigerate for 45-60 minutes until set, or freeze for 20-30 minutes.
