Ingredients

For the crust

  • 1 cup Graham crackers or digestives, finely crushed
  • 3 tbsp Melted butter Add a tiny pinch of salt for flavor.

For the filling

  • 8 oz Cream cheese, softened Use full-fat, brick-style for best texture.
  • 1/2 cup Granulated sugar
  • 1 tsp Vanilla extract For depth of flavor.
  • 1 tbsp Fresh lemon juice A squeeze for brightness.
  • 1 cup Heavy cream or whipping cream Helps the filling set fluffy and smooth.

For toppings

  • Jam, fresh berries, lemon curd, or chocolate shavings Use whatever you prefer.

Instructions

Make the crust

  • Crush the crackers into fine crumbs. Stir with melted butter and a tiny pinch of salt.
  • Press the mixture into the bottoms of clean jars using the back of a spoon.

Mix the filling and assemble

  • Beat softened cream cheese with sugar until smooth and glossy.
  • Add vanilla and a squeeze of lemon.
  • In a separate bowl, whip cold cream to soft peaks, then fold it into the cream cheese gently.
  • Spoon or pipe the filling over the crust. Tap jars on the counter to settle air pockets.
  • Chill for at least 2 to 3 hours, but overnight is best.

Notes

Chill jars before adding fresh fruit if making a day ahead. Keep jars covered to prevent fridge odors. They stay lovely for up to 3 days. Adjust sweetness to taste.
