  • 1/2 cup graham cracker crumbs, crushed
  • 4 cups powdered sugar Add gradually for a thick texture.

For the Coating

  • 10 oz chocolate chips or almond bark Melt according to package instructions.

Instructions

Preparation

  • In a large mixing bowl, combine the softened cream cheese and butter. Use a mixer to blend until the texture is smooth and creamy.
  • Stir in the crushed graham cracker crumbs until fully combined with the cream cheese mixture.
  • Gradually add the powdered sugar, one cup at a time, mixing thoroughly after each addition until the mixture becomes thick and dough-like.
  • Cover the bowl with plastic wrap and place it in the refrigerator for at least 1 hour to help the mixture set properly.

Forming the Bites

  • Once chilled, scoop out portions and roll them into small balls using your hands.
  • Place the rolled bites on a tray lined with parchment paper.
  • Chill in the refrigerator for another 10 to 20 minutes to help maintain their shape.

Coating

  • Melt the chocolate chips or almond bark until smooth and pourable.
  • Dip each cheesecake bite into the melted chocolate, ensuring they are fully coated. Use a fork to lift each one out, allowing excess chocolate to drip back into the bowl.
  • Return the dipped bites to the parchment-lined tray.
  • Let cool at room temperature or refrigerate until the chocolate hardens.

Notes

For serving, arrange on a decorative platter and consider garnishing with chopped nuts or sea salt. Pairs well with fresh fruit or whipped cream. Flavor variations include adding vanilla extract or lemon zest to the mixture. Store in an airtight container in the fridge or freeze for up to 2 months.
