Ingredients

For the cheesecake mixture

  • 15.25 oz 15.25 oz (430 g) Funfetti cake mix (heat-treated) Use heat-treated cake mix for safety.
  • 8 oz 8 oz (227 g) cream cheese, softened Use room temperature for a smooth mixture.

For coating and topping

  • 8 oz 8 oz (227 g) white almond bark (for coating) Melt before dipping.

Instructions

Preparation

  • Heat-treat the cake mix by pouring it into a microwave-safe bowl and heating in two intervals of 30 seconds each, stirring in between. Allow it to cool completely.
  • In a mixing bowl, beat the softened cream cheese using a mixer for 2 to 3 minutes until smooth and creamy.
  • Add the cooled cake mix to the cream cheese and mix well, then cover and refrigerate for at least 2 hours.

Shaping

  • Once chilled, scoop 1 tablespoon portions of the mixture and roll into smooth balls. Place them on a parchment-lined baking sheet.

Coating

  • Melt the white almond bark in a microwave-safe bowl, heating in 30-second intervals until silky smooth.
  • Dip each cheesecake ball into the melted almond bark, allowing excess to drip off. Sprinkle colorful toppings on top.
  • Chill in the refrigerator until the coating is set before serving.

Notes

These cheesecake balls can be served in a platter or packaged as gifts. They last up to a week in an airtight container in the fridge. You can freeze them before coating and let them thaw in the refrigerator before serving.
