Ingredients

For the Honey Roasted Cashews

  • 2 cups Raw cashews Whole or pieces, both work.
  • 1/4 cup Honey Use a flavor you enjoy.
  • 1 tablespoon Sesame seeds Optional, but recommended for extra crunch.
  • 1 pinch Salt Balances the sweetness.
  • 1 teaspoon Vanilla extract Optional.
  • 2 tablespoons Butter or coconut oil Helps the coating cling.

For the No-Bake Bars

  • 1 cup Crushed graham crackers Can substitute with crushed vanilla wafers.
  • 1/2 cup Cashew butter Peanut butter can be used as a substitute.
  • 1/4 cup Honey or maple syrup For sweetness and stickiness.
  • 1/2 cup Mini chocolate chips Optional, for extra sweetness.

Instructions

Make the Honey Roasted Cashews

  • In a skillet over low heat, warm the butter (or coconut oil) with honey and a pinch of salt until smooth.
  • Add the cashews and stir to coat well.
  • Sprinkle in sesame seeds and continue stirring for a minute.
  • Pour the coated cashews onto parchment paper and spread them out.
  • Let them cool completely before chopping into chunks.

Assemble the Bars

  • Mix crushed graham crackers with cashew butter and honey to achieve a damp sand texture.
  • Press the mixture into a lined pan.
  • Scatter the chopped honey roasted cashews over the top and press down gently.
  • If desired, melt chocolate chips and drizzle over the top.
  • Chill until firm, then slice into bars.

Notes

Chill the bars for at least 1-2 hours; for sharper edges, freeze for 15 minutes before slicing.
