  • 2 pieces New York Strip Steaks (1 inch thick, Choice or Prime grade) Approximately 300-400 grams each
  • 2 tablespoons Olive oil or vegetable/canola oil
  • 1 teaspoon Salt To taste
  • ½ teaspoon Black pepper To taste
  • ½ teaspoon White pepper Optional
  • 2 tablespoons Compound butter For topping

Instructions

Cooking Steak

  • Preheat your outdoor grill to high temperature, around 500°F (260°C).
  • Once the grill is hot, place the steaks on it. Sear for 3 minutes on each side.
  • After searing, reduce the grill heat to medium-low. Close the lid and cook until the internal temperature of the steaks reaches 130°F (54°C) for medium-rare, around 4-6 minutes.
  • Remove the steaks from the grill and top each with 1 tablespoon of compound butter. Tent them with aluminum foil and let them rest for 5 to 10 minutes before cutting.

Alternative Cooking Methods

  • For the Reverse Sear Method: Preheat your oven to 250°F (120°C). Season your steaks and bake until they reach 10-15°F (5-7°C) below your target temperature. Then, sear them in a hot skillet.
  • For the Butter Baste Method: Pat the steaks dry, season them, and heat oil in a skillet. Sear the steaks while adding butter and aromatics (like garlic and thyme) while basting the tops.

Notes

Let the steaks rest to allow juices to redistribute. Use a meat thermometer for precise cooking. Feel free to experiment with additional herbs and spices.
