Ingredients

Strawberry Filling

  • 2 cups Strawberries, chopped Fresh or frozen
  • 2-3 tablespoons Sugar Adjust to taste
  • 1 teaspoon Lemon juice Enhances the flavor
  • 1 teaspoon Cornstarch Helps thicken the juices

Oat Crumble Topping

  • 1/3 cup Old fashioned oats Not instant
  • 3 tablespoons All purpose flour
  • 2 tablespoons Brown sugar
  • 1 pinch Salt
  • 3 tablespoons Butter, melted
  • 1 pinch Cinnamon or vanilla (optional) For added flavor

Instructions

Preparation

  • Preheat the oven to 375°F (or 350°F if your oven runs hot).
  • In a bowl, toss chopped strawberries with sugar, lemon juice, and cornstarch. Let it sit for 5 minutes.
  • In another bowl, mix oats, flour, brown sugar, and salt. Add melted butter and stir until it looks like chunky wet sand.
  • Divide the strawberry mixture between two ramekins.
  • Spoon the oat topping over the berries and lightly press it down.

Baking

  • Bake for 18 to 24 minutes until the filling bubbles and the top is golden. Cool for 10 minutes before serving.

Notes

Serve with vanilla ice cream, whipped cream, or Greek yogurt. Store in the refrigerator for up to 2 days.
