  • Cover the mixture with plastic wrap and refrigerate it for about 30 minutes to firm up.
  • Once chilled, use a small cookie scoop or your hands to form bite-sized balls from the mixture.
  • Roll each ball in additional finely chopped pecans until fully coated.
  • Place the coated cheese balls on a platter and refrigerate until you are ready to serve.

Chill time is key; don’t skip it! Prepare these cheese balls a day in advance and roll them in pecans just before serving for a fresh look. You can use fresh pineapple if desired, just ensure it's finely chopped and drained.
