  • In a medium bowl, combine the softened cream cheese, drained pineapple, chopped cranberries, powdered sugar, vanilla extract, cinnamon, and salt. Stir until the mixture is creamy and well combined.
  • Cover the bowl with plastic wrap and place it in the refrigerator for about 30 minutes.
  • Use a small cookie scoop or your hands to form the mixture into 1-inch balls.
  • Roll each cheese ball in the finely chopped pecans to coat them well.
  • Place the rolled cheese balls back in the refrigerator to chill for an additional 30 minutes before serving.

Notes

Make these cheese balls a day in advance and keep them refrigerated. Roll them in the pecans right before serving for a fresh texture. Customize by adding shredded coconut, mini chocolate chips, or diced jalapeƱos. Ensure crackers served are gluten-free if necessary.
