Ingredients

For the Brioche Dough

  • 1 cup warm milk Warm to the touch, not hot
  • 2 tablespoons active dry yeast To bloom
  • 1/4 cup sugar For sweetness
  • 3 cups all-purpose flour Plus extra for dusting
  • 1 teaspoon salt To balance sweetness
  • 2 large eggs Room temperature
  • 1/2 cup unsalted butter Softened, added last

For the Cinnamon Sugar Coating

  • 1 cup granulated sugar For rolling
  • 2 teaspoons ground cinnamon For flavoring
  • 1/2 cup unsalted butter Melted, for coating

Instructions

Mixing and Rising

  • In a bowl, mix warm milk and yeast and let bloom.
  • Add sugar and eggs, then mix in flour and salt.
  • Knead dough for 8-10 minutes until elastic.
  • Let dough rise until doubled, about 1 hour.
  • Chill dough in the fridge for 30-60 minutes.

Cutting and Shaping

  • Dust counter with flour and roll out the dough into a rectangle.
  • Cut dough into 1-inch squares and roll each into a ball.
  • Place on a parchment-lined baking sheet, letting them space.

Baking and Coating

  • Bake in a preheated oven at 350°F (175°C) for 15 minutes, or until golden.
  • Brush warm bites with melted butter, then roll in cinnamon sugar mixture.

Notes

These bites are best served warm and can be made ahead by freezing before baking. Try adding fillings like cream cheese or chocolate for variation.
