Ingredients

For the cup base

  • 1 package refrigerated pie dough (or use homemade) Alternative options include puff pastry or phyllo shells.
  • 1 tablespoon granulated sugar For sprinkling on the crust.
  • 1 tablespoon melted butter For brushing the crust.

For the apple filling

  • 3 firm apples peeled and diced small Honeycrisp or Pink Lady recommended.
  • 3 tablespoons brown sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon lemon juice To enhance flavor.
  • 1 teaspoon vanilla For flavor.
  • 1 teaspoon cornstarch or flour To thicken the filling.

For the crumble topping

  • 1/2 cup flour
  • 1/3 cup old-fashioned oats
  • 1/3 cup brown sugar
  • 1/2 teaspoon cinnamon
  • a pinch of salt
  • 4 tablespoons cold butter, cubed For the crumble texture.

Instructions

Preparation and Baking

  • Preheat the oven to 375°F and lightly butter your muffin tin.
  • Roll the dough and cut into 12 circles, then press into the muffin cups. Brush with melted butter and sprinkle with sugar.
  • Mix the diced apples with brown sugar, cinnamon, lemon juice, vanilla, and cornstarch. Spoon the mixture into each cup without overfilling.
  • Combine the crumble ingredients with your fingers until it clumps together, then pile it generously on top of the apple filling.
  • Bake for 16 to 20 minutes until the crumble topping is golden and the filling bubbles. Cool for 10 minutes before removing from the muffin tin.

Notes

You can prepare the dough a day in advance, chill the crumble for up to three days, or mix the apple filling a few hours ahead. To freeze, bake and freeze cooled cups, or assemble and freeze unbaked for later baking.
