Ingredients

For the Chicken Souvlaki

  • 500 g boneless, skinless chicken breast, cut into 1-inch cubes
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • ½ tsp paprika
  • Salt and black pepper, to taste

For the Cranberry Tzatziki

  • 1 cup Greek yogurt
  • ½ cup grated cucumber, excess liquid squeezed out
  • 2 tbsp cranberry sauce or finely chopped dried cranberries
  • 1 clove garlic, minced
  • 1 tbsp lemon juice
  • 1 tsp olive oil
  • Salt and pepper, to taste

For Assembly

  • 4 pieces pita or flatbreads
  • Sliced red onion
  • Fresh lettuce or arugula
  • Crumbled feta cheese

Instructions

Preparation

  • In a medium bowl, mix together olive oil, lemon juice, minced garlic, dried oregano, paprika, salt, and black pepper. Add the cubed chicken and toss until well coated. Cover the bowl and let it marinate in the refrigerator for at least 30 minutes or up to 2 hours for a deeper flavor.
  • In another bowl, combine Greek yogurt, grated cucumber, cranberry sauce (or chopped dried cranberries), minced garlic, lemon juice, olive oil, salt, and pepper. Mix well and refrigerate while you cook the chicken.

Cooking

  • Thread the marinated chicken onto skewers. Grill over medium-high heat for about 10–12 minutes, turning occasionally, until the chicken is golden brown and cooked through.
  • If you don’t have a grill, you can also cook the chicken in a hot skillet with a drizzle of olive oil for the same amount of time.
  • Lightly heat the pita or flatbreads in a dry skillet or directly on the grill for about 30 seconds on each side until soft and pliable.

Assembly

  • Spread a generous spoonful of cranberry tzatziki over each pita. Layer with fresh lettuce or arugula, grilled chicken pieces, sliced red onion, and a sprinkle of crumbled feta.
  • Roll or fold the pita to wrap it all up.
  • Enjoy your wraps immediately while warm, with extra tzatziki on the side for dipping.

Notes

Let the chicken rest for a few minutes after grilling to help keep it juicy. Feel free to add or swap out veggies based on your preference. You can grill extra chicken ahead of time for use in salads or wraps later in the week.
