Ingredients

For the Cream

  • 1 cup cold heavy cream Make sure it's very cold for better whipping.
  • 8 ounces mascarpone, cold but pliable Let it soften slightly for easier mixing.
  • 1/3 cup powdered sugar, sifted Sifting prevents lumps.
  • 2 teaspoons pure vanilla extract Use pure extract for the best flavor.
  • 1 pinch fine sea salt

For the Assembly

  • 16 to 20 pieces crisp ladyfingers Quantity may vary based on cup size.
  • 2 to 3 teaspoons culinary grade matcha powder, divided Adjust quantity for desired matcha strength.
  • 1 cup warm water or milk for the matcha dipping mixture Warm liquid helps dissolve matcha.
  • 1 to 2 tablespoons sugar or honey for the matcha dip, to taste Sweeten to personal preference.
  • Optional white chocolate shavings or a few berries for topping Adds a decorative touch.

Instructions

Preparation

  • Whip the cream. Add cold heavy cream to a cold bowl and whip to soft peaks. Stop when it looks fluffy and swoops, not stiff and clumpy. Set aside in the fridge.
  • Make the cream base. In another bowl, beat mascarpone with powdered sugar, vanilla, and salt until smooth and creamy. Do not overmix or it can turn grainy. Gently fold in the whipped cream until the mixture is silky.
  • Whisk the matcha dip. In a shallow bowl, whisk 1 to 1.5 teaspoons matcha with warm water or milk and sugar or honey until no lumps remain.
  • Layer the cups. Dip each ladyfinger quickly into the matcha mixture and place a layer of them into your cups, followed by a layer of the mascarpone cream. Repeat with another layer of dipped ladyfingers and top with cream.
  • Chill. Cover and refrigerate the cups for at least 3 hours, ideally 6 to 8 hours.
  • Finish and serve. Just before serving, sift a layer of matcha over the top and add optional toppings.

Notes

Cover each cup tightly and store in the fridge for 3 to 4 days. Dust with matcha right before serving for best results.
