  • 1 pound Brussels sprouts Trimmed and halved or quartered
  • 2 tablespoons Olive oil For roasting
  • 1 tablespoon Maple syrup To add at the end of cooking
  • 1 tablespoon Balsamic vinegar To add at the end of cooking
  • 1/3 cup Feta cheese Crumble before serving
  • Salt and pepper to taste Salt and pepper Use to season before roasting

Instructions

Preparation

  • Preheat your oven to 425°F (220°C) and place a sheet pan inside to heat up.
  • Wash and trim the Brussels sprouts. Halve small sprouts and quarter larger ones to ensure even cooking.
  • Pat the sprouts dry to ensure they roast properly.

Roasting

  • In a large bowl, toss the sprouts with olive oil, salt, and pepper.
  • Carefully remove the hot sheet pan from the oven and pour the Brussels sprouts onto it, cut side down.
  • Roast for 15 minutes, then shake the pan to toss the sprouts.
  • Continue roasting for another 8 to 10 minutes, until they are golden and crispy.
  • In the last 5 to 8 minutes of roasting, drizzle the maple syrup and balsamic vinegar over the sprouts.

Finishing Touches

  • Once done, remove the pan from the oven and crumble feta cheese over the sprouts before serving.

Notes

For extra flavor, consider adding crushed red pepper flakes for heat or swap feta with goat cheese for a creamier texture. Store leftovers in an airtight container for up to 4 days and reheat at 400°F for a few minutes to retain crispiness.
