  • 2 large ripe mangoes, peeled and cut into chunks (about 2 to 2 1/2 cups)
  • 1-2 tablespoons fresh lime juice (start with 1, add more if desired)
  • 1 teaspoon lime zest (optional)
  • 1 pinch salt (to enhance flavors)
  • 2-4 tablespoons cold water or coconut water (only if needed for blending)

Instructions

Preparation

  • Freeze the mango chunks on a plate or small tray for at least 4 hours, preferably overnight.
  • In a blender or food processor, add frozen mango, lime juice, lime zest (if using), and salt. Blend until creamy.
  • If the mixture is not blending well, add a splash of cold water or coconut water gradually.
  • Taste the mixture. If desired, add another squeeze of lime juice for brightness.
  • Serve immediately for a soft-serve texture, or freeze for 30 to 60 minutes for a firmer scoop.

Notes

To store, use a small container to minimize air exposure. Press parchment or plastic wrap on the surface before freezing. Let sit for 10 to 15 minutes before scooping.
