Ingredients

For the Crackers

  • 2 cups grated mozzarella about 225 g
  • 2 tablespoons cream cheese about 30 g
  • 3/4 cup almond flour about 75 g
  • 1 large egg
  • 1 tablespoon ranch seasoning mix about 15 g
  • 1/2 teaspoon red pepper flakes adjust to taste

Preparation

  • Preheat your oven to 425°F (220°C).
  • In a large microwave-safe bowl, combine the grated mozzarella and cream cheese. Microwave in 30-second intervals until melted, stirring after each interval until smooth.
  • Once the cheese is melted, stir in the almond flour, egg, ranch seasoning, and red pepper flakes until a dough forms.
  • Place the dough on a large sheet of parchment paper and cover it with a second sheet. Roll the dough out to about 1/4 inch thick.
  • Cut the dough into 1-inch square pieces. You should get around 60 pieces.

Baking

  • Transfer the crackers to a baking sheet lined with parchment paper. Bake for 5 minutes, then flip the crackers and bake for an additional 5 minutes.
  • Allow the crackers to cool before serving.

Notes

Be sure to use dry ranch seasoning mix, not liquid dressing. The crackers will be softer if they don't have enough seasoning! Store them tightly covered in the refrigerator for up to 5 days.
