Ingredients

Biscuit dough

  • 250 g all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 60 g unsalted butter, chilled and cubed Keep chilled to ensure flaky biscuits.
  • 180 ml milk

Lobster filling

  • 150 g cooked lobster meat, chopped Can use frozen lobster, thawed and drained.
  • 60 g shredded cheddar cheese
  • 25 g green onions, chopped
  • 1 tablespoon lemon juice
  • 1/2 teaspoon garlic powder

Instructions

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a large mixing bowl, combine the flour, baking powder, and salt.
  • Cut in the chilled butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  • Gradually stir in the milk until just combined. Be careful not to overmix!
  • In a separate bowl, combine the lobster meat, cheddar cheese, green onions, lemon juice, and garlic powder. Mix well.
  • Turn the dough out onto a floured surface and knead gently for just a minute to bring it together.
  • Roll out the dough to about 1/2 inch thick and use a round cutter to cut out your biscuit rounds.

Assembly and Baking

  • Place a spoonful of the lobster mixture on half of the rounds, then top with the remaining rounds, sealing the edges tightly.
  • Arrange the stuffed biscuits on a baking sheet and bake for 20 to 25 minutes or until they are golden brown.
  • Serve warm and enjoy!

Notes

Serve with a refreshing salad or light soup. Drizzle with melted butter or serve with a tangy dipping sauce. Garnish with fresh herbs or green onions for color.
