Preparation

  • In a large pot, bring salted water to a boil. Add the baby potatoes and cook for 12 to 15 minutes, or until tender when pierced with a fork. Drain and let cool slightly.
  • Once the potatoes are cool enough to handle, cut them into bite-sized pieces, about 1-inch chunks.
  • In a mixing bowl, whisk together the sour cream, mayonnaise, Dijon mustard, garlic powder, salt, and pepper until smooth.
  • Gently fold the cut potatoes into the dressing. Add the shredded cheddar cheese, crumbled bacon, and sliced green onions, mixing carefully to avoid breaking up the potatoes.
  • Spoon the loaded potato salad mixture generously into the lettuce cups or clear snack cups.
  • Cover the cups with plastic wrap and chill in the refrigerator until ready to serve.
