  • 1 cup Vanilla protein powder Whey or plant-based both work.
  • 1/2 cup Almond flour Helps with that soft, truffle texture.
  • 1 cup Unsweetened shredded coconut Plus extra for rolling.
  • 1/2 cup Greek yogurt Makes them creamy and adds more protein.
  • 2-4 tbsp Honey or maple syrup Adjust to desired sweetness.
  • 1 tbsp Lemon zest Fresh zest recommended for strong lemon flavor.
  • 2 tbsp Fresh lemon juice Bottled works in a pinch.
  • 1 pinch Salt Enhances the lemon flavor.
  • 1 tsp Vanilla extract Optional, for added flavor.

Instructions

Preparation

  • In a bowl, mix the vanilla protein powder, almond flour, shredded coconut, and salt until evenly combined.
  • Add in Greek yogurt, honey or maple syrup, lemon zest, and lemon juice. Stir until a dough forms.
  • Taste the mixture and adjust sweetness or zest if necessary.
  • Scoop the dough and roll into small balls, approximately 1 tablespoon each.
  • If desired, roll the balls in additional shredded coconut for texture.
  • Chill the truffles in the fridge for at least 30 minutes to firm up.

Notes

Store in an airtight container in the fridge for up to 7 days or freeze for 2-3 months. The lemon flavor improves after a day in the fridge.
