  • 3 tablespoons chia seeds These seeds work as a thickener.
  • 3/4 cup milk of your choice Dairy or non-dairy both work.
  • 2 tablespoons Greek yogurt For extra creaminess.
  • 1/2 piece lime zest Zest from half a lime.
  • 1-2 tablespoons lime juice Adjust for tanginess.
  • 1-2 teaspoons honey or maple syrup To sweeten the pudding.

  • optional crushed graham crackers For that classic pie feeling.

Instructions

Preparation

  • In a small bowl or jar, stir together 3 tablespoons chia seeds, 3/4 cup milk, 2 tablespoons yogurt, zest of half a lime, and 1 to 2 tablespoons lime juice.
  • Add 1 to 2 teaspoons honey or maple syrup, then stir really well.
  • Wait 5 minutes and stir again to prevent clumps.
  • Cover and chill for at least 2 hours or overnight.

Serving

  • For No-Bake Matcha Yogurt Parfaits, layer the key lime chia pudding with matcha yogurt and your choice of fruits and toppings.

Notes

The chia pudding can be made ahead of time. For best texture, add crunchy toppings right before serving. Adjust the sweetness based on your preference.
