Ingredients

  • 1 cup unsweetened almond milk or coconut milk Choose based on desired richness.
  • 1 to 2 tablespoons sweetener (Allulose, monk fruit, or erythritol blend) Adjust sweetness to taste.
  • 1 teaspoon vanilla extract

  • 3 tablespoons chia seeds Use fresh, quality seeds.

Instructions

Preparation

  • In a bowl or jar, whisk together the milk, sweetener, vanilla, and salt.
  • While whisking, sprinkle in chia seeds and continue whisking for 30 to 45 seconds.
  • Let the mixture sit for 10 minutes and whisk again to prevent clumping.
  • Cover and chill in the refrigerator for at least 2 hours, or overnight for a thicker pudding.

Serving

  • Before serving, stir and taste. Adjust the sweetness or add milk if too thick.

Notes

This pudding can be made ahead and stored in the fridge for 4 to 5 days. Portion into jars for easy grab-and-go meals. Experiment with different flavors to find your favorite!
