Ingredients

Wet Ingredients

  • 250 g apple puree without sugar Use unsweetened store-bought or homemade for the best flavor.
  • 2 large eggs

Dry Ingredients

  • 160 g oats You can blend them finely for a smoother texture or use them whole for a heartier muffin.
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon Adjust the amount according to your taste preference.
  • 1 medium apple, diced

Instructions

Preparation

  • Preheat your oven to 180 °C (350 °F) and line a muffin tin with cases.
  • If desired, grind the oats in a blender until finely ground. Alternatively, use whole oats.
  • In a large bowl, combine the apple puree and eggs. Whisk until smooth.
  • Stir in the oats, baking powder, and cinnamon until evenly mixed.
  • Gently fold in the diced apple until just combined.
  • Distribute the batter evenly into the prepared muffin cases.
  • Bake for about 20–22 minutes, or until the tops are golden and a toothpick inserted into the center comes out clean.

Notes

For a twist, add chopped nuts or dried fruits into the batter. Make sure not to overmix the batter to keep the muffins light and fluffy. Check for doneness a couple of minutes early; ovens can vary in temperature. Store in an airtight container at room temperature for up to three days, or refrigerate for a week. These muffins can be reheated in the microwave for a few seconds to warm them up.
