Ingredients

For the nougat

  • 1 cup honey Use a good quality honey for better flavor.
  • 1 cup sugar Granulated sugar is ideal.
  • 1/4 cup water
  • 2 large egg whites Make sure to beat until soft peaks form.
  • 1 cup toasted almonds Can use mixed nuts if preferred.
  • 1 cup toasted pistachios Alternately, use mixed nuts.
  • 1 tsp vanilla extract Or substitute with citrus zest.

Instructions

Preparation

  • Preheat your oven to 350 degrees F (175 degrees C). Spread the almonds or mixed nuts on a baking sheet and toast them in the oven for about 8-10 minutes, until they are golden and fragrant.
  • In a saucepan, heat the honey over medium heat until it reaches 250 degrees F (120 degrees C). Use a candy thermometer to ensure accuracy.
  • In a separate saucepan, combine the sugar and water. Heat this mixture until it reaches 300 degrees F (150 degrees C), which is the hard crack stage.
  • While the syrups are heating, place the egg whites in a mixing bowl. Beat them until they form soft peaks.

Combining

  • Slowly add the hot honey into the whipped egg whites while continuing to beat. Be careful not to splash yourself!
  • Once the honey is fully incorporated, gradually add the hot sugar syrup while mixing well.
  • Gently fold in the toasted nuts and your choice of vanilla extract or citrus zest for added flavor.

Setting

  • Line a dish with parchment paper and pour the mixture into it, spreading it evenly. Use a spatula to press it down firmly.
  • Let it set for at least 4 hours at room temperature. If it’s warmer in your kitchen, consider placing it in the fridge for quicker setting.

Serving

  • Once set, remove it from the dish, peel off the parchment, and cut into pieces. Serve the Torrone or store in an airtight container.

Notes

Ensure your pots and utensils are dry to avoid sugar syrup seizing. Feel free to mix different types of nuts or dried fruits for a unique twist. Store in an airtight container at room temperature.
