Ingredients

  • 2 small sweet potatoes (about 1 cup, diced after cooking)
  • 6 oz lean ground beef (170 g)
  • 1/2 tsp salt
  • 1/2 tsp chili powder
  • 2/3 cup cottage cheese (150 g)
  • 1/2 ripe avocado diced
  • 2–3 tsp hot honey to taste
  • black pepper to taste
  • chili flakes optional, for extra heat

Instructions

Baking the Sweet Potatoes

  • Preheat your oven to 400°F (200°C). Wash the sweet potatoes and prick them with a fork. Place them directly on the oven rack or on a baking dish and bake for about 45-60 minutes, or until soft when squeezed gently.

Cooking the Beef

  • While your sweet potatoes are baking, heat a skillet over medium-high heat. Add the lean ground beef along with salt and chili powder. Cook, breaking the meat apart with a spatula, until it’s browned and fully cooked, about 5-7 minutes. Drain any excess fat if needed.

Preparing the Sweet Potatoes

  • Once done, take the sweet potatoes out of the oven and let them cool for a few minutes. Carefully cut each sweet potato in half, lengthwise. Use a fork to fluff the inside gently.

Assembling the Boats

  • Spoon the cooked ground beef into each sweet potato half. Top generously with cottage cheese and diced avocado.

Finishing Touches

  • Drizzle 2-3 teaspoons of hot honey over each stuffed sweet potato. Season with fresh black pepper and, if desired, a sprinkle of chili flakes for a little extra heat.

Notes

You can customize the filling by using ground turkey or chicken for a lighter option. For a vegetarian alternative, try black beans or lentils. Add diced jalapeños for more heat, or toss in some spinach or kale into the beef while cooking for added nutrition. These boats can be prepared in advance and frozen for later use.
