Preparation

  • Preheat your oven to 400°F (200°C).
  • Prepare the carrots by peeling and cutting them into sticks of similar size for even cooking.
  • In a large mixing bowl, combine the carrot sticks with olive oil, honey, salt, and pepper, ensuring they are well coated.
  • Line a baking sheet with parchment paper and spread the seasoned carrots evenly on the sheet.
  • Roast the carrots in the preheated oven for 25 to 30 minutes, flipping halfway through, until they are golden and tender.
  • Once cooked, remove the carrots from the oven and transfer them to a serving platter.
  • Top the roasted carrots with crumbled feta cheese, dried cranberries, and chopped walnuts. If desired, sprinkle with fresh parsley for garnish.

Notes

For extra caramelization, increase the roasting time by a few minutes while keeping an eye on them. Ensure that the carrots are not overcrowded on the baking sheet to achieve a perfect roast. Let the dish cool for a few minutes before adding the cheese and nuts to prevent them from wilting. If you like a kick, consider adding a pinch of chili flakes for a spicy twist.
